Keto pancakes with double cream & blueberries

2 eggs, 60g mascarpone then mix with mixer and can add 1 tea spoon of erythritol but not necessarily. Then fry on the pan and ready to eat! You should get 3 pancakes out of it!

The topping is mixed double cream with mixer and some blueberries

ojars, do you think it'd work with greek yoghurt instead of mascarpone? (i dont have it )

tan.92 I don’t think it is a good idea to swap for yogurt. Yogurt have a different consistency. But I have tried with soft cheese and it was good. Mascarpone you can buy in any shop:)

jul, greek yoghurt is thick consistency like double cream though. i know i can get in any shop but i don't have it home, that's what i meant :)
