Slice the zucchini thin, toss in olive oil top with a little garlic salt. Bake 40 mins at 350 degrees top with a tablespoon of grated Parmesan.
I've consistently lost weight each day since I started this "diet". So whatever I'm eating is obviously working for MY body. Everyone is different and everyone can't follow the exact same diet.

Mmmm sounds awesome! Love zucchini. Barely even care about eating pasta now that I’m off keto. Zucchini is better!

Crazy thought when I count calories and love this food combo: How much olive oil and or how many calorie is the oil? 30 calories of a vegetable is awesome. 30 calories, when I have only so many calories to consume, and include cheese, and oil, seems I could easily undercount my calories. Help! How are you doing this? Am I missing something? Do you wave the oil over the cheese and zucchini or is something not quite right with the count of calories? IDK....looks great though!

The olive oil is in the original recipe. I think that would throw off the calorie count so I don't use it. I used half the serving size of Parmesan (10cals) and 1 cup of zucchini (20 cals)
Total: 30 cals

Gotcha! I was really stumped when I saw olive oil and cheese and the calorie count. Love the combo!
