It's another beautiful day, and inspite of the rain, that we started off with, the sun is shining. Like many of you, I'm enjoying the current challenge that I've signed up for; "Every Day is a New Start". It encourages, and calls for us to find the good things in our lives, and regularly give thanks for them. I like the challenge, because it gives me a tangible way to practice what it says in, Ephesians 5:20, "Giving thanks always for all things unto God and the Father in the name of our Lord Jesus Christ...". With that in mind, I'm thankful for another beautiful day, leading into the weekend. I'm also thankful for the amazing lunch, I just had. I really enjoy tuna salad sandwiches, but being in a low carb lifestyle, unless you can find a low carb bread, or wrap, to put it into, they're just not something you're going to have on a regular basis. Earlier, this week, I bought some romaine lettuce leaves, to make bun-less hamburgers with; and a day or so ago, decided to make a lower carb tuna salad, which could be cradled in the leaves as well. Today, I kicked it up a notch by adding a touch of 'Bite Back Tartar Sauce', made by The Ojai Cook, which is low carb, and for some extra crunch; garnished the wraps with Barbecued Pork Rinds. It might sound kinda wierd, but it was really tasty, and worth doing again, and again, and again! It's funny how the, simplest, spur of the momment ideas, can turn into a very good low carb meal. Who says that low carb is boring? NOT ME! Have a blessed weekend everyone. :-)

Low carb is far from boring. I can testify to that because I spent years on a low fat diet. Now that is boring! BTW - thanks for your encouraging pep talk this morning. Have you see the "Positive Attitude Challenge"? Still time to join.

Your recipe ideas always inspire me to try just a little something new. I, too, find that things don't get boring if one remains a bit creative with the ingredients and weird go-togethers are sometimes just a delightful surprise. I responded this morning earlier in someone's journal about your response on positive thinkings. Too often we settle in a funk because we refuse to raise our eyes and look for the good. By nature, I am a positive person and realize that if I get down it is because I am looking down and not at the One who has given me such rich blessings to enjoy...blessings, such as, beautiful sunrises, awesome sunsets, dear friends and loved ones, a warm home and most of all, a promise for eternity. Thank you for your inspiring message today and that delicious sounding tuna fish sandwich. Have a great weekend.
