I actually ate another lill piece of chicken It was about 6oz, which I feel is a lot. It was so good! I am still so stuffed. I actually ate a lot today. I had a piece of bacon and sausage this morning with my creamy coffee and snacked on nuts through out the day. I didn’t get to take a break so I ate as I worked.

Put it on a smaller plate and it will look like more. It is looks good but looks low carb/keto. I tend to believe that small plates work best for keto and high fat meals.

I read in several articles that olive oil is not safe to use at very high temps like deep frying. A friend of mine is an RD and she confirmed that as well.

I just knew someone was going to warn me about cooking with EVOo 🤣🤣🤣 Lol I know it not good to do but it’s soooooo good! And I miss cooking with it. It’s been a couple of months. I tried to cook it on medium heat. I’ve heard it turns into trans fat?

Lol you know yet u still fried with it? As long as cooking in it is not for a long time its ok but still very high temp is not good. I cook eggs and sautee veggies with olive oil but never deep fry. It becomes carcinogenic

Pan frying is different than deep frying - much lower temperatures. Probably safe with olive oil. You just don't want to let it get hot enough that it smokes.

Regular olive oil is just fine for cooking. No need to pay the extra for EVOO. Regular olive oil is ok for frying. Save the more expensive EVOO for baking and salads that can be if it from the more delicate flavor.

That looks good, I have never fried cucumber though!? What is it like? I’m not sure about that, love the idea of coating chicken with almond flour, did you just dip it or did you use something to get it to stick? Thanks x

I basically sautéed the chicken in the oil. It wasn’t deep fried and it was at a lower heat; no smoke. I seasoned the chicken first and then sprinkled the almond flour over it and patted it on. It stuck fairly easily. I didn’t fry the cucumbers! I think they have too much liquid that might cause issues lol

Thanks for replying, sorry I think I read it wrong 😂 fried cucumbers! I will have a go with the chicken, we usually have it 3 times a week, at least, so doing something different always helps 👍
