Dinner last night was Japanese-themed at our house. Hubby brought home sushi and miso soup cups from the grocery store (we have a nice one near us that prepares sushi and sashimi fresh) and we had edamame in the freezer. The big crunch roll was from a package that served two, so we split it. The other pack served three, but I had less than a serving in the three pieces pictured. It was very filling and fun to have a variety of food to eat. Total calories for what you see pictured was 512 calories. I added on almost 200 more calories later that night eating really good cherries hubby brought home from Costco. Kept within my RDI for the day, too!

Yeah, I know myself and Keto isn't for me :) I'm trying to keep my overall calories below a particular number as well as balance my protein/carb/fat. So far fat seems to be winning, which is why I'm investigating more plant-based proteins. I love me my cheese!
