What a great day and a beautiful morning.Sun high in the sky,cool breezes before the humidity sets in later in the day.
Mama eagle guarding her baby from ospreys who have been bothering the
eaglet.Yes,the baby could defend itself,however right now anything that
comes to the nest is look upon as food,so the osprey could injure or kill the eaglet and it would like nothing better then to do that even
tho the baby is 3 mos old. Osprey and eagles do not mix well,they eat
each others babies(when babies are small).Poor little baby has not got
the balance yet to hop up on a branch out of the nest so it can get stronger and fledge. Sorry off the beaten track here,but I love and adore our national symbol the majestic Eagle.

Ctiss(stef)your dh meatballs now is my new snack.Yummy tell him!I was
laughing to myself this morning during my walk thinking if a hungry dog
would come slong there goes the meatball. Its not easy walking and nibbling on something but I sure did enjoy.
So when I got home I had to add to my breakfast so decided to make a
flaxmeal pancake. I want to tell you what a weird looking thing that
was,but I added some vanilla to it,topped it with a little SF jam
and to my surprise it was delish..........

Its not easy figuring out the night before what to eat but am attempting to do that so I can stay within reasonable nc's.At least most of my meal is planned for today which I will enter after I finish
here.Dinner is the late one,because I always seem to change my mind or
maybe not hungry for that kind of meal.

Good morning, glad to see you are enjoying your eaglet. Hopefully he will make it to flight soon and be safe from harm. I was wondering where you found that mealball recipe? I bought some zucchini and plan on making noodles from them. I also found a low carb marinara sauce. Meatballs would be like the icing on the cake, so to speak. I made a pumpkin pie last night. It's acually Baylor's (from Atkins) recipe. Delicious! I'll send it if youd like.

It sounds like your having a beautiful morning, Its cloudy dull and raining here :( but I am up and ready for another day. I love the mornings, rain or shine its another chance to do it right, its fun trying. Have a great day !

This recipe is for 2 pies. I broke it down in 1/2 and only made 1. 29oz pumpkin 1 1/2 cups half and half 3/4 cup heavy cream 1 tsp nutmeg 1 tsp cinnamon 1/2 tsp cloves 1 tsp salt 4 large eggs 1 cup splenda mix pumpkin, splenda and spices. Add eggs slowly one at a time. Then pour in the cream and half and half. Mix well. Spray 2 glass pie plates with canola (I used Pam spray). Pour into the pie plates. Bake 35-45 minutes @ 350. Make sure toothpick comes out clean. If not, check again in 3 minutes. Don't wait too long. It can go from done to gone very quickly. (10 servings per pie) Per serving: fat - 6.48 carbs - 5.16 fiber - 0.3 net carbs - 4.86 protein - 2.40 calories - 86 http://baylorandatkins.wordpress.com/2009/11/14/pumpkin-pie-lower-nc-count-all-phases/

Keli and Msamy here is the recipe for ctiss dh meatballs. This makes 8 meatballs.The 6 servings of ground chuck is 1 1/2 pounds or 24 oz.A serving a low carb ketsup is 1 Tablespoon 6 servings ground chuck 4 serving reduced sugar ketsup 1 medium egg 1 tsp garlic powder 1/4 cup of chopped onion. Mix all ingredients tog.until well blended.Make into 8 equal size meatballs. Cook in skillet over medium heat until done.Serve by themselves or with reduced ketsup or even your sauce Keli.Here is the nutrition facts for it. Serving Size.....1 Amt per serving,calories from fat 154,total cal.232 % Daily Values Total fat......17.06g 26% Sat. fat.......6.923g 35% Poly...........0.08g Mono...........0.211g cholesterol....80 mg 27% sodium.........142mg 6% Potassium......19mg Total Carb......1.34g 0% Dietary Fiber...0.1g 0% Sugars..........0.84g Protein..........16.56g Vit.A 1% Vit C 1% Calcium 8% Daily Values based on a 2000 calorie diet Your daily values may be higher or lower depending on your calorie needs.

Thanks for the pie recipe Keli.MsAmy her is the flax pancake 2eggs,2Tablespoon flaxmeal,1/4teaspoon baking powder,1 pkg of splenda or whatever you use. Mix well and cook in frying pan. This does not bubble like a reg.pancake.I cooked mine in 2T of butter to get the fat. It looks weird but it delish enjoy thanks for stopping by

Keli-Can you share your low carb marinara sauce recipe? Or is it store bought. If so what brand? I have made the zucchini noodles with tomato sauce but the sauce is always too high of carbs. It tastes good though with the zucchini noodles.

I actually found an organic marinara sauce at the grocery store yesterday. It has 3 net carbs per 1/2 serving. I will have to get the name to you later as I don't have it with me now (at work). I haven't tried the zucchini noodles yet, are they good?

Mary Ellen, I am so happy that you enjoyed the meatballs. Hubby is always looking for ways to make me new and interesting foods. I love the eagles. We live near St. Louis, and in the winter they hunt along the lock and dams not too far from my home. It is sooo awesome to go and see them fishing in the river and roosting in the cliffs and trees. Every once in awhile we will have one fly over the house. I also love the ospreys. I have some pics that I took near Englewood, FLA of some of them fishing. We get a lot of red tailed hawks also, and last year we had a fledgling in our black wlnut tree. Guess he was just learning to fly and got tired. He sat in that tree calling for his mama for 15 minutes. lol. Isn't the variety of life, on this 3rd rock from the sun, amazing?
