This is the recipe I've used for this for a long time, https://www.allrecipes.com/recipe/242225/the-best-ricotta-pancakes/ you can make them as Crunchy or Fluffy as you like them, I like both and switch them up, you can add healthy Wheat Flour or other items as needed, but I prefer this recipe no matter the Diet i am on.

There’s no flour in these recipe is: two eggs quarter cup ricotta cheese quarter teaspoon baking soda or powder – of salt 15 g vanilla casein protein powder quarter teaspoon vanilla extract mix well I brown these in 5 g of coconut oil Which is optional I top with 30 g of unsweetened Greek yogurt with one drop of coconut flavored Stevia sweetener
