Been a while since I posted, but I've been around. Still fighting on. Been experimenting with adding different foods and how they affect not only my weight, but appetite and cravings. I have been dealing with some things and trying to get my relationship with food back on track, in a healthy way. Still going strong with plant based and next month I'm hoping to take another step forward.
I'll also be changing up my workout routine next month, so I'll have the same number of cardio days as strength training days. See if it helps lose some centimetres, as well.
Today's meal was: Lentil & eggplant "stew" with baked sweet potato; stir fried cabbage; broccoli & cauli salad; and apple blueberry chia pudding with (sugar free) hot chocolate for dessert. Still getting used to the texture of soaked chia seeds, but I'll try grinding them first for a smoother consistency.

Had a bit of an indulgent weekend; lots of high carb foods (mostly bread, lol!), though it was relatively controlled. Workouts were still on point, though. And I managed to keep to my IF schedule, though my eating window was longer than usual.
Back to normal today, plus trying to adjust my daily schedule to accomodate studying. School is back and I'm already feeling overwhelmed 😭. But there's only moving forward!

Got my routine back!! Workouts are back to normal (even though it's such a pain to workout in this cold), and my meals are back to normal. I'm starting to feel the difficulty of being the only non-meat-eater in a family of people who eat meat.
Since I do most of the cooking, I have to plan and prepare 2 sets of meals, which is particularly difficult with my shift rotations. But I'm getting the hang of it. I'm working my way to being a vegetarian, and then I'm hoping to ditch the cheese an eggs eventually. I do miss yoghurt, though, since there really aren't any good/minimally processed non-dairy alternatives. I'm researching homemade options, though I haven't started experimenting yet.

It's been a busy start to the month. Today's meal was: a West African inspired chickpea and vegetable peanut butter stew (I had 2 bowls), beet & quinoa salad, and fruit for dessert. Also had a sample of mushroom biltong - 😍 mind blown! It was amazing.
So all the busy-ness and a changing shift roster has messed with my workout routine, but I'm kind of back on track. In terms of my eating plan, I'm now doing 5 days of plant-based eating a week, and I've cut out red meat. I recently realized that I'm slowly becoming a vegetarian. I'm still loving the this new way of eating, and I keep discovering new (natural) products that substitute really well for animal products. It's crazy how our tastes change after some time of eating a certain way.
I was supposed to go and buy new jeans, but haven't had the time. Was hoping to be a size 34 by end of June (from a 38 in Jan), but I'm pretty sure I'm not there yet, though I have definitely dropped to a 36 (I think, lol!).

Happy Tuesday y'all. Hope everyone had a great long weekend.
Today's meal: homemade "baked" beans with sweet potato topped with nutritional yeast; warm kale, green bean & carrot salad served with turmeric tahini dressing; tomatoes, cucumber, and quinoa beet salad on the side. Dessert was a (mostly) vegan custard served over fruit salad and topped with coconut and granola. Yum!! 😋.
Only reason it wasn't completely vegan was because I used whey protein powder to boost the nutrition (I'm trying to finish the powder I have left because I hate wasting food/money, but it's almost finished). Anyway, workouts and eating have been on track for the last 2 weeks or so. At this point, I feel like I'm in maintenance mode because I'm not really aiming to lose weight, though I am keen to get more definition, but that's purely for aesthetics. I've been thinking of seeing a personal trainer to help banish the last bits of fat still clinging, but I'm not yet swayed. I think I'm coming to a place of contentment when it comes to my relationship with food and my own body.
Never thought I'd see the the day, lol! Some days are still a drag, but I'm working on it.
