Although I try to eat fewer carbs and more protein, I eat a sweet potato or yam nearly every day. They are low on the glycemic index and do not trigger my cravings for more catbs. They are full of nutrients and fiber...and taste yummy! Still grateful for:

I agree, sweet potatoes are so yummy!! I like to sprinkle cinnamon on my oven SP fries, I can't handle spicy things like chili powder.. :) And to think I used to REFUSE to eat sweet potatoes!!

Love potatoes white or sweet ones..and as long as I don't eat the peel..(too much fiber) I can eat them just fine..I use ciniman and butter on my sweet ones..Yummy...:O)

I love sweet potatoes, too. Usually as a side, cooked in microwave. Tonight I'm making a stew with sweet potatoes, garbanzos, onions, garlic, ginger, red wine, cinnamon, cumin, paprika, red pepper flakes, chopped dried apricots, golden raisins, & sliced almonds. Probably higher in carbs than you would eat, but delicious & healthy. I gave Beau a kiss from you; he likes "the Bengal cat lady ". :o)

yum. you make me want one. I used to eat them, and acorn/butternut squash like crazy in the fall. do them sweet with sugar/cin or spicy with tabasco & chili powder, or salty. mmmm

I love my sweet potatoes, and it is remarkable that after I eat a small one with dinner, my blood sugar is just fine. They are so tasty. I love the sweet potato fries, baked sweet potatoes, mashed sweet potatoes, etc. I really love candied yams from Thanksgiving, but I only eat those once a year. What's not to love?

Love 'em - used to bake them in the microwave and then cut them up and add on top of a veggies/salad dish - they were 'meaty' and gave a nice balance so the entire dish wasn't just 'cold'. I don't so much now because MH's nurse said too high in sugar - weird. Maybe I need to research them more / test him afterward to be sure before I abandon them all together.
