SO!!! The mother-in-law is no longer at our house and is now officially moved from Texas to the Great Pacific Northwest into her own Senior Living apartment here.
Last week I cooked a bunch of vegetarian dinners for her while she stayed at our place waiting for her furniture and stuff to arrive. Burritos, lasagna, baked potato with vegetarian chili, enchiladas, bean soup, and vegetarian pot pie. It's tough making a good meal for a vegetarian!
Now that she is gone, I can get back on track to simpler cooking and far less carbs.
For those of you that saw my previous post about the MIL... One thing for sure that the hubs and I observed is that we cannot allow ourselves to become obese.
His Mom is in terrible shape, and can barely get around - not just because of the weight, but because she has injured her back and knee as a result of her weight.
I hope this is a wake up call for me! Keep me motivated my FS friends.
