Fall is such a great time to think about low carb cooking. Soups, stews, casseroles with veggies and cheese all bubbly and brown! I'm ready for a change from salads.

If you love beef stew, try using cubed Rutabagas; they are low in carbs and high in fiber. And, they take on the flavor of the soup stock and feel like cooked potatoes in your mouth!

YUM -- colder temps here this weekend and I have soup making plans -- love grabbing a frozen soup from the freezer for lunches - especially on busy days. Making hamburger-veggie soup and usually use turnips but will be looking for rutabagas instead - great tip :)
